What's the maximum number of solar panels the Victron Energy SCC110050210 can handle?
Victron Energy SCC110050210 Smart Solar MPPT 100/50 Charge Controller with Bluetooth
Do all the panels terminate into one MPPT controller? Or does each panel need it's own controller. I believe a MPPT controller such as the 100/50 can handle up to 700w but is there a limit on how many panels can be connected?

You don't need to have one panel per controller as long as all the panels are shaded equally. You can put panels in series or parallel up the the allowed wattage. If you put panels in series then you add their voltages and you need to keep the open circuit voltage VOC 10% less than the max rating of the charge controller.
