You are right that the Victron PMP122305100 MultiPlus-II 12/3000/120-50 2x120V Inverter/Charger is quite limited and wont necessarily be able to power the entire RV. 3000 VA is good for a microwave, a toaster, a kettle, a small induction cooktop, a hairdryer, a TV, Laptop, etc but not all at once. It can probably power two of those items at a time.
It is possible to gang multiple units together for more power but then you quickly run into the problem that the DC current required to feed them becomes so large its hard to provide adequate wiring. The recommended DC fuse for this is 400 amps so with two you are looking at 800 amps.
