The temp sensor part will still work if you extend the cable. However if you extend it by any appreciable amount you are going to encounter issues in the main negative power cable caused by voltage drop. The main cable forms part of the circuit that is used to measure voltage. The idea is to mount the shunt close to the battery so there isnt much voltage drop in the cable. If you extend it then when there is current flowing (and hence voltage drop) you will get a different reading for voltage than when there isn't current flowing. This makes for a more difficult time interpreting the results.
