What you are proposing is not going to work because the PCB is measuring minute voltages (50 mV at full scale) and separating it from the shunt is going to destroy your accuracy. What you need to do is mount the shunt in a waterproof box. Here is a photo of one somebody made out of a $14 box that they bought in Home Depot:
