The Blue Sea temp sensor is not advertised as being compatible with Victron GX devices. You can certainly try it and see if it works. The accepted sensors are either the Victron Energy ASS000001000 temp sensor for Quattro, MultiPlus and Cerbo GX which is a wired sensor, or the Ruuvi Wireless sensors. Although we haven't personally tried the Blue Sea one we did try the Balmar Alternator Temp Sensor and found that it worked, (but you may need to calibrate it) A lot of these sensors use the same Texas Instruments chip. The alternator temp sensor is designed for high temperatures.
One of our customers did a bit of research on this: The Victron sensor is based on a TI LM335 with a max continuous rating of 100C and intermittent of 125C. The Balmar seems to be based on a TI LM 235 with a max continuous of 125C and intermittent to 150C. The electrical specs seem largely similar otherwise.
