ST stands for Single Throw, DP stands for Double Throw.
SPST (Single Pole Single Throw): Single Pole means it controls one circuit (the most common). Single Throw means it can just be ON or OFF
DPDT (Double Pole Double Throw): DP means it can control two separate circuits. Double Throw means there are two ON options for each. These kind of switches are often used to reverse the direction of a motor so you can have it go UP, DOWN or be OFF
