The primary use for an isolation transformer is Corrosion Protection: It eliminates any continuous wires between the boat and the dock, which prevents galvanic corrosion of your hull and underwater metal parts (like props and shafts). There is no electrical connection between the boat and the dock, instead it is replaced by an electromagnetic connection.
A secondary reason to use a transformer would be for the purposes of changing voltage as the boat travels around to different regions
